If anyone was to ask you point blank what is the best invention of the 21st century, what would you say? The Iphone? Ipad? Electric cars? Social Media? The artificial heart maybe? Hmmmm, all good inventions but do they really compare to the Instant Pot? I’m gonna go out on a limb and say hell no. Haha.

But all joking aside, this is really one invention that anyone and everyone, especially a busy vegan should have in their kitchen. Why? What’s so great about it? Isn’t it just a crock pot on steroids? Ummmm, no. Not even close. This sucker can take a bag of dried beans to table in 30 minutes flat! It can also make soups, casseroles, jellies and jams, yogurt, breads and even desserts. This is just the tip of the iceberg people. This small appliance has changed my life, so run, don’t walk and go get one. NOW.

Herbed Polenta with Beans and Bok Choy

For anyone that really knows me, they know that I am a complete sucker for burritos. There’s just something about all the layers and flavors in them.

Vegan Sloppy Joes

When I was a kid growing up in Hamilton, OH, seems like Sloppy Joe’s was a staple in our household. It’s one of those foods that I don’t make often but sometimes a craving will just hit me out of the blue and I have to have one. This recipe comes very close to what I remember as a kid, but much healthier! Normally I make mine using a meat substitute but lately I have really tried to use less of that due to it being pretty processed. And if you haven’t tried lentils as a meat replacement, you totally should!

Instant Pot Pad Thai

Before I went vegan I had never had Thai Food. I know that sounds crazy, but you have to realize, I’m from a family that ate a pretty standard American diet that consisted of mostly meat, cheese, pizza, fish sticks and fries. Don’t hold that against my mom, it was the 80’s. haha

Anyway, going vegan really got me out of my food comfort zone, and Thai is a food that has quickly become my favorite. And it contains noodles. HELLO!! And who doesn’t like noodles??

Cauliflower Tikka Masala

Another dish that I had never tried before veganism got me was Tikka Masala (well any Indian dish really). OH MY GOSH, I just didn’t know what I was missing. I have to say that I have fallen in love with the flavors of India. Also, most of India worships the beautiful and sacred cow (my spirit animal), in case you didn’t know. I would love to visit there someday!

Polenta With Lemony Asparagus

Polenta is really gaining popularity in the vegan community because it’s inexpensive, filling, low calorie and really good for you. I think the asparagus in this recipe gives a nice, flavorful and elegant touch to a simple recipe.  Oh and make sure to save your aquafaba if you use canned chickpeas for this recipe.

Wait, did you just say in your head “what’s aquafaba?” Oh young grasshopper, you have much to learn. I’m going to have to school you in a future blog post but prepare to have your mind blown! Of course, if you can’t wait that long, it’s only a google search away.

Detox Vegetable Soup

Am I the only one who ate too much over the Holidays? I mean, seriously, I ate a lot. I made soooo much food to take to my families and events, and of course, I had to sample everything. I honestly have no restraint when it comes to vegan comfort foods and desserts. It’s quite sad.

Anyhoo, maybe I should make a batch of this yummy detox soup for myself. Just thinking outloud.

Vegan Jollof Rice

Rice, oh how I love thee, let me count the ways. Rice is something that I would and could eat every day. And if I’m being completely honest, I almost do. Carbs is life yo.

I am always searching for different rice dishes to make and I came across this one and thought it a sounded interesting. Well, I was not disappointed. The unique and complex flavors in this South African dish are simply amazing.

Vegan Butter Chicken

Vegan Butter Chicken. If those three little words don’t make your mouth water, are you even vegan bro? Just kidding. I guess just the word butter makes me all warm and tingly inside. So, now that you all know a little too much about me, let’s talk about this recipe. It has all the elements that I love in a comforting dish; warm spices, chickpeas and rice….the trifecta.

Also,  I know this recipe calls for “soy curls” but you can add vegan chicken strips instead, or simply omit altogether.

Vegan Alfredo Sauce

You had me at Alfredo. Do you remember when you would go out and order a big plate of rich, cheesy, creamy alfredo and how freaking amazing it was? And then about a half hour later you feel the regret sink in. You know, the “why in the heck did I just eat all of that and now I feel like total sh!t” regret? Yeah, so do I. But fear not,  I have come to save the day with this recipe.  I am renaming it the “No Regrets Alfredo Sauce” recipe.

Instant Pot Baked Potatoes

Am I the only one who loves baked potatoes but feel like they are a giant pain to make? Or they just take too long to make even in a microwave? Do people still use microwaves? And are people still actually baking their potatoes like in an actual oven??! These are questions that I need answers to people! But for now, I will share the easiest and most effective way to make  a “baked” potato. To be honest, you’re not actually gonna bake them, your gonna steam em, but you will end up with the fluffiest potato ever! Baking them is soooo 10 years ago.
